This delightful recipe is popular both in Kerala and Goa. It is similar to the sambal recipes found in Pattaya and even Japan, although in Japan, this is made with grilled and shredded squid.
Ingredients: (Serves 4)
- 150 g/5 1⁄3 oz Dried prawns (shrimps)
- 3 tablespoons vegetable oil
- 15 Red shallots, or 4 medium brown onions, peeled and finely sliced
- 5-6 Green chillies, seeded, finely sliced
- 3 Red chillies, seeded and finely sliced
- 1 Lime, juice extracted
- Sugar to taste
- Salt to taste
Method:
Dry-roast dried prawns until they turn crisp and golden. Pound lightly to crumble.
Heat oil and fry shallots or onions and chillies until shallots or onions are golden brown.
Add pounded dried prawns and stir-fry for about 5 minutes over medium heat until aroma is strong.
Remove from heat and leave to cool, then add lime juice, sugar and salt to taste.Toss well.
Serve as part of a meal, with rice and other dishes.
