Roasted Coconut Cashew Nuts Recipe
Serve these hot and sweet cashew nuts in
paper or cellophane cones at parties. Not only do they look enticing and
taste terrific, but the cones help to keep clothes and hands clean and
can simply be thrown away afterwards.
Ingredients: (Serves 6 to 8)
15 ml/1 tablespoon peanut (groundnut) oil
30 ml/2 tablespoons clear honey
250 g/9 oz/2 cups cashew nuts
115 g/4 oz/1⅓ cups desiccated (dry
unsweetened shredded) coconut
2 small fresh red chilies, seeded and finely
chopped
Salt and ground black pepper
Method:
Heat the oil in a wok or large frying pan
and then stir in the honey. After a few seconds add the nuts and coconut
and stir-fry until both are golden brown.
Add the chilies, with salt and pepper to
taste. Toss until all the ingredients are well mixed. Serve warm or
cooled in paper cones or saucers.
Variations: Almonds also work well,
or choose peanuts for a more economical snack.
