All it takes is a little stir-fried pickled turnip, garlic and shallots to make an already flavorful steamed cod fillet even tastier.
Ingredients: (Serves 4)
- 2 tablespoons cooking oil
- 4 cod fillets
- 3 slices ginger, peeled and cut into fine strips
For the crispy toppings:
- 3 shallots, peeled and finely chopped
- 3 cloves garlic peeled and finely chopped
- 3 tablespoons chopped preserved turnip
For the seasoning:
- 2 teaspoons light soy sauce
- 1 teaspoon sesame oil
- ΒΌ teaspoon sugar
- 3 tablespoons water
Method:
Prepare the crispy topping. Heat oil in a frying pan over a medium heat. Stir-fry the shallots, garlic and preserved turnip until fragrant and crisp. Remove from the heat and set aside.
Place the fish on a heatproof plate and top with ginger. Set aside.
Combine the ingredients for seasoning and mix well. Pour over the fish, then place the fish in a steamer and steam for 10-12 minutes, or until fish is cooked.
Transfer the fish, together with the steaming juices onto a serving plate. Top with crispy toppings and garnish as desired.
Note: The ingredients for crispy toppings can also be prepared in a microwave oven. Place the ingredients in a microwave safe bowl and stir in 2 tablespoons oil. Cover and cook on high for 1-2 minutes.
