This is an innovative way to use crab meat and is a staple dish in Chinese restaurants. Use only the freshest crab meat or top-quality canned crab meat. Most tofu comes in two types, soft and firm. Use the firm variety for these parcels.
Ingredients: (Serves 4)
- 150 g/5 oz fresh or canned crab meat
- 5 ml/1 teaspoon cornstarch (cornflour)
- 1 egg, lightly beaten
- 15 ml/1 tablespoon sesame oil
- 2 packets firm tofu, about 500 g/1ΒΌ lb
- 2 scallions (spring onions), trimmed and finely chopped
- Salt and ground black pepper
Method:
Lightly crush the crab meat and mix to a paste with the cornstarch and beaten egg. Add salt, pepper and sesame oil and mix thoroughly.
Divide the tofu into 4 square pieces. With a melon baller, gently scoop out a hollow in each piece. Fill each hollow with the crab meat mixture and place in a deep plate. Sprinkle each piece with finely chopped scallions.
Steam the parcels for 5 minutes and serve as a warm appetizer.
