This very simple soup of Cantonese origin is often drunk as a cooling brew to counteract a surfeit of spicy dishes. Daikon is full of flavor and has an important place within the range of Chinese Yin foods purported to dispel body heat.
Ingredients: (Serves 4)
- 150 g/5 oz daikon (mooli), peeled
- 700 ml/1ΒΌ pints water
- 5 ml/1 teaspoon salt
- 15 ml/1 tablespoon sesame oil
- 115 g/4 oz shrimps (prawns), shelled
- 1 scallion (spring onions), trimmed and chopped
- Freshly ground black pepper
Method:
Slice the daikon into thin matchsticks pieces. Bring water to the boil, add the daikon, salt and sesame oil and simmer for 15 minutes.
Add the shrimps and simmer for 5 minutes. Scatter with chopped scallions, add black pepper to taste and serve immediately while hot.
